My research program is structured around four key research areas of focus: 1) Identification and quantification of impactful aroma compounds in specialty crops and packaged goods by instrumental and olfactory analyses; 2) Stabilization of predominant yet labile aroma compounds in foods for targeted delivery and control release; 3) Elucidation the generation pathways of processing-induced off-aromas in ingredients and beverages; 4) Investigation of plant volatile response to environmental stresses under controlled environment agriculture.
