Dr. Xiaofen Du

Dr. Xiaofen Du is an assistant professor from the department of Nutrition and Food Sciences, Texas Woman's University for the past 5 years, where she is devoted to research and teaching associated with flavor chemistry and food science. Dr. Du's research interests include natural flavor ingredient development, flavor chemistry (aroma, taste, texture, and mouthfeel) and sensory evaluation of various fresh and processed foods and beverages, and the relationship between food flavor and indirect and direct health benefits.
