Oyindamola Akinpelu is a Food Science and Flavor Chemistry graduate student at Texas Woman's University , Denton. Prior to her graduate studies, she attended culinary school and worked as a professional baker. This sparked her interest in food science and now in graduate school under the mentorship of Dr. Xiaofen Du, her research interest includes studying cucumber flavor profiles through instrumental analytical methods and comparing the impact of environmental conditions on cucumber flavor. She hopes to apply her knowledge of food science and flavor chemistry in the food industry to develop innovative and flavorful products.
