Katie is a fifth year PhD Candidate in the Food Science Graduate Group at UC Davis. Her research with Dr. Alyson Mitchell is focused on studying the blue elderberry, the subspecies of this popular fruit that is native to western North America. Katie has investigated the chemical composition of the fruit and flower of this plant, including the sugars, organic acids,  phenolic compounds, and volatile profile. Her goal after completing her PhD is to work in the food industry to develop sustainable and satisfying food products.
