Alternative proteins, that is non-meat proteins, are anticipated to play a critical role in meeting the protein requirements of our expanding population, thus addressing the burgeoning global issue of food security. Additionally, production of alternative proteins may have benefits in relation to adaptability to environmental stress. The chemistry, physics, processing, quality, nutrition, and safety of foods with plant, insect, and cultured proteins are expected to have a significant impact on the supply chain from the farm to the fork. Research on, production, environmental adaptability, isolation and concentration, matrix functionality, sensory optimization, digestibility, and nutrition of alternative proteins will be presented. The symposium will also address potential chemical and microbial contaminants, and allergenicity of these emerging ingredients.
