This symposium welcomes protein chemists and food scientists to present new results in all frontiers of food protein research. Reports of new developments in the following areas are especially encouraged: 1) Novel methods of isolating and/or producing food proteins, especially those with physical, chemical, immunological, or functional properties that benefit human health. 2) Investigation and analysis of food proteins with applications in food production and processing, including their improvement by protein engineering. 3) Identification of new food proteins that cause food safety concerns, such as protein toxins and food allergens. Novel results of chemical, physical, and biological analyses of foodborne proteins, including foodborne bacterial toxins, will also be of interest to this symposium
