Jinhe Bai has worked for the USDA-ARS Citrus and Other Subtropical Products Research Unit since 2008. His research activities focus on preserving the postharvest quality and safety of fresh produce and improving the processing technologies of horticultural crops. Specific areas of expertise include active packaging, edible coating, microencapsulation, controlled-release disinfectant, postharvest chilling injury, flavor chemistry, citrus juice and low sugar juice and beverage processing.
