Dr. Hong-Sik Hwang

Research Chemist, USDA, ARS, NCAUR

Dr. Hwang is a Research Chemist at NCAUR (National Center for Agricultural Utilization Research), ARS, USDA, Peoria, IL. He has been with NCAUR since 2010. He received his Ph.D. in organic chemistry from Texas Tech University, Lubbock, TX in 1996. After postdoctoral appointments at the University of Kansas, Lawrence, Kansas and NCAUR, Peoria, Illinois, Dr. Hwang joined the R&D department of Indium Corporation, Clinton, NY, and worked for 9 years.  He has published about 100 technical papers including 1 book, 7 book chapters, 2 patents and 1 pending patent. He served as editor of the Food Science and Biotechnology and is serving as editor of Biocatalysis and Agricultural Biotechnology, associate editor of Journal of Food Science and editorial board member of Journal of Food Chemistry and Nanotechnology. Dr. Hwang's current research interests are new antioxidant systems for lipids, oxidation mechanism of oil, trans fat free food products, and oleogels.
