Sustainability drivers have inspired a re-investment in biosurfactants and bio-based surfactants. These include bio-derived amphiphiles like lipids, glycolipids, polysaccharides, and surface-active peptides and surfactants prepared from natural feedstocks like sugar surfactants. This symposium will focus on fundamental research enabling development of these materials for industrial applications along with novel instrumentation used for understanding the dynamic mechanical properties coupled with molecular-scale investigations including microtensiometers, synchrotron based X-ray and neutron methods, and atomic force microscopy. The major thrust of the symposium is to connect fundamental properties to performance of the surfactants in formulated products such as cleaners, cosmetics, foods, crop treatments, and pharmaceuticals. We invite talks covering a range of topics. Suggested topics include solution self-assembly, adsorption and organization of the surfactants at interfaces (air, liquid, solid), bulk and interfacial rheology, foam formation and stability, and interactions with enzymes, polysaccharides and other biopolymers.
