Dr Audry Peredo-Lovillo

The Dr. Peredo-Lovillo obtained a Bachelor's degree in industrial chemistry and a Master's degree in Food Sciences from the Universidad Veracruzana. Later, develop their Doctorate studies in Food Sciences, at the Escuela Nacional de Ciencias Biológicas of the Instituto Politécnico Nacional, Mexico City. He is currently a research professor attached to the Career of Engineering in Food Industries at the Instituto Tecnológico Superior de Xalapa. His research line is focused on the development and research of functional foods, focusing on fermented products of artisan origin.
