Alyson Mitchell

Dr. Mitchell is a Professor of Food Chemistry in the Department of Food Science at UC Davis where she serves as Master Advisor for the Food Science major and co-director of the Food Safety and Measurement Facility. Research conducted in her laboratory emphasizes the development of analytical methods for improved understanding of the chemical composition of foods, impact of contemporary processing, packaging, and storage on quality, bioactives and toxins in foods, and development of new analytical tools for food quality assessment, traceability, and authentication.
